Natural cooking: A gift for great enjoyment

The Tann is also at the height of culinary delights – and surrounded by forest. Head chef Barbara lovingly calls her creative kitchen concept ‘forest kitchen’. The name says it all: real woodland treasures and forest flavours appear on your plate here. Healthy, sustainable and cleverly combined. ‘Slow Food’ in the truest sense of the word. This is a place where time and mindfulness are the order of the day. Freshly harvested or gathered in the forest. Everything when it’s ready, following the natural rhythm of nature. Along with selected South Tyrolean quality, products and ingredients that are sustainably produced. From people that Tann knows by name. Fresh produce from our own vegetable and herb garden, milk and eggs from the neighbour and meat from local farms. The result: genuine enjoyment, naturally good.

Barbara Untermarzoner has written the idea of sustainability on her cooking spoon and is a member of the Slow Food South Tyrol association.

Forest superfood: Tempting and naturally healthy

Yes, you can eat good health. Good fortune as well. This is especially true for the creative natural cuisine in the Tann. Where chef Barbara herself wields the cooking spoon and makes use of nature’s rich treasure. The closer to the kitchen door, the better – that is the secret of the rich, full taste. Old recipes straight from grandma’s store cupboard, enriched with everything Mother Nature has to offer within easy reach: wild herbs, fruit of the forest berries and mushrooms. Roots and seeds. Barbara’s legendary forest cuisine also includes more unconventional delicacies such as spruce needles, tree shoots and mountain pine essence.
